Trader Joe's meatless chick'n fingers and mashed potatoes with pureed squash, kale with nuts and brussel sprouts in syrup.
Chick'n Fingers, Corn and Potatoes
Meatless faux chicken fingers from Trader Joe's with mashed potatoes and corn.
Hawaiian Sloppy Joe's
Vegan sloppy joe's using lentils with tator tots and sauteed kale on the side with frosted pumpkin cake for dessert.
Mango Curry on Rice
The Mango Curry contained tofu, pineapple and curry sauce. The bird's nest was from Trader Joe's. The oatmeal brownie contained two types of oats and dark chocolate chips.
Meatless Meatball Sandwich
Meatless meatballs and marinara sauce on a hamburger bun. On the side is tater tots and kale with nuts.
MLT Sandwiches
The sandwich is a BLT with crispy, oven-roasted mushroom slivers replacing the bacon. I also added some Just Mayo.
Ziti with Rose' Sauce
Ziti pasta in rose' sauce with a bun and salad on the side. Dessert was a bar made of coconut, dark chocolate chips and pecans.
Rotini with Red Sauce
Rotini pasta with tomato sauce with bread and salad on the side and a glass of intense red Zinfandel.
Summer In A Bowl
"Summer In A Bowl" is spaghetti noodles with tomatoes, basil and olive oil. Also had bread on the side.
Thanksgiving 2015
Gardein roast, mashed potatoes with vegan gravy, vegan stuffing, sweet potatoes, carrots, vegan slaw and a bun with a glass of red wine. Dessert was pumpkin pie with vegan whip topping.
Vegan Pot Pie
The pot pie is filled with carrots, peas, celery and onions all swimming in a tasty vegan gravy.
Lunch
Grilled Pita Bread and Toppings
Grilled Pita Bread with hummus and baba ganoush, tomatoes, radish, red onions, olives and cucumber for toppings.
Stir fried 5-grain tempeh
Stir fried 5-grain tempeh with sundried tomato, green beans and bok choy over rice stick noodles.
