Recipe : Amish Cinnamon Friendship Muffins

This is a vegan version of the Amish Cinnamon Friendship Bread recipe. This same recipe can be used for bread, cake or muffins.

This is a vegan version of the Amish Cinnamon Friendship Bread recipe. Do not use a metal bowl for mixing (see the note about this below). Do not refrigerate. It is normal for the batter to thicken, bubble or ferment. This makes two loaves of bread or 1 cake or 24 muffins.

      Instructions
      1. Day 1: You receiver the fermented batter in a 1 gallon ziploc bag. Do Nothing. Just place the bag on the kitchen counter.
      2. Day 2 : Squeeze the bag several times.
      3. Day 3 : Squeeze the bag several times.
      4. Day 4 : Add 1 cup of flour, 1 cup of sugar, 1 cup of almond milk. Squeeze bag.
      5. Day 5 : Squeeze the bag several times.
      6. Day 6 : Add 1 cup of flour, 1 cup of sugar, 1 cup of almond milk. Squeeze bag.
      7. Day 7 : Squeeze the bag several times.
      8. Day 8 : Squeeze the bag several times.
      9. Day 9 : Squeeze the bag several times.
      10. Day 10 : In a large, non-metal bowl, combine batter with 1 cup each flour, sugar and almond milk. Mix with a wooden spoon. Pour four 1-cup starters into individual gallon ziploc bags. Give away starters to friends with this set of directions; keep one for yourself if you want to continue baking every 10 days. It is important to follow this sequence exactly.
      11. To the remaining batter add the ingredients listed above.
      12. In a separate bowl, mix 1 tsp. cinnamon and 2 tbsp. sugar. Sprinkle into well-greased loaf pans and coat the sides with sugar mixture. Do not use Pam or other non-stick spray. If making bread or cake, bake at 350 degrees for 1 hour or until done. If you are making muffins, bake at 20 minutes or until done.
